- 2 cups water

- 2 cloves garlic, minced
- 1 carrot, diced
- 1 red bell pepper, diced
- 1 tsp. dried thyme
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 cup chopped fresh parsley
Instructions:

Rinse the millet grain under running water and drain well.

In a medium saucepan, bring the 2 cups of water to a boil. Add the rinsed millet grain and reduce the heat to low. Cover the saucepan and let the millet simmer for 15-20 minutes, or until all the water is absorbed and the millet is tender.

In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and minced garlic and sauté for 2-3 minutes, or until the onion is translucent.

Add the diced carrot and red bell pepper to the skillet and continue to sauté for 5-7 minutes, or until the vegetables are tender.

Add the cooked millet grain to the skillet with the vegetables and stir to combine.
