Southwestern Quinoa Salad with Freeze-Dried Corn

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1/2 cup freeze-dried corn
  • 1 can (15 oz.) black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1/4 red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp. lime juice
  • 1 tbsp. olive oil
  • 1 tsp. ground cumin
  • 1/2 tsp. chili powder
  • Salt and pepper, to taste

Instructions:

  1. In a medium pot, bring the quinoa and water to a boil. Reduce the heat and simmer, covered, for 15-20 minutes or until the water is absorbed and the quinoa is tender.
  2. In a small bowl, whisk together the lime juice, olive oil, cumin, chilli powder, salt, and pepper to make the dressing.
  3. In a large mixing bowl, combine the cooked quinoa, freeze-dried corn, black beans, red bell pepper, red onion, and cilantro.
  4. Drizzle the dressing over the quinoa mixture and toss to combine.
  5. Serve immediately or refrigerate until ready to serve.
