Ingredients:

• 3 cups whole rosehips
• 4 cups water
• 4 cups peeled and diced apples
• 4 cups sugar
• 1/4 cup lemon juice

Instructions:

1. Place the rosehips and water in a large pot and bring to a boil. Reduce the heat to a simmer and cook for 20-30 minutes, or until the rosehips are soft.
2. Strain the rosehips through a fine mesh sieve, pressing down on the solids to extract as much liquid as possible. Discard the solids.
3. Place the rosehip liquid, apples, sugar, and lemon juice in a large pot. Bring to a boil over medium-high heat, stirring constantly.
4. Reduce the heat to medium-low and simmer for 40-50 minutes, or until the jelly has thickened.
5. Pour the hot jelly into sterilised jars and seal with canning lids.
6. Allow the jelly to cool completely before storing in the refrigerator for up to 1 month. Enjoy the jelly on toast, biscuits, or with your favourite cheese.
