Here is a recipe using green lentils

Green Lentil Soup

Ingredients:

  • 1 cup organic green lentils
  • 2 tbsp. olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 bay leaf
  • 4 cups vegetable broth
  • 2 tbsp. tomato paste
  • 1 tsp. ground cumin
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

  1. Rinse the organic green lentils under cold water and drain them. Set them aside.

  2. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion, garlic, carrots, and celery, and sauté for about 5 minutes or until the vegetables are tender.

  3. Add the bay leaf and stir to combine.

  4. Add the organic green lentils, vegetable broth, tomato paste, ground cumin, salt, and pepper. Stir to combine.

  5. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 30-40 minutes or until the lentils are tender and the soup has thickened.

  6. Remove the bay leaf and discard it.

  7. Use an immersion blender or transfer the soup to a blender and blend until smooth.

  8. If the soup is too thick, you can add some water or more vegetable broth to thin it out.

  9. Taste the soup and adjust the seasoning if necessary.

  10. Serve the soup hot, garnished with chopped parsley if desired.
