Lemongrass Coconut Soup

Ingredients:

  • 1 tbsp. vegetable oil
  • 1 small onion, diced
  • 1 tbsp. fresh ginger, minced
  • 2 cloves garlic, minced
  • 2 tbsp. dried lemongrass
  • 1 red chilli, chopped (optional)
  • 4 cups vegetable or chicken broth
  • 1 can (13.5 oz) coconut milk
  • 1 tbsp. fish sauce
  • 1 tbsp. lime juice
  • 1 cup sliced mushrooms
  • 1 cup baby bok choy, chopped
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper, to taste

Instructions:

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent.
  3. Add the minced ginger and garlic, dried lemongrass, and chopped red chili (if using), and sauté for another minute or until fragrant.
  4. Add the vegetable or chicken broth, coconut milk, fish sauce, and lime juice to the pot and bring to a simmer.
  5. Add the sliced mushrooms and baby bok choy to the pot and simmer for 5-10 minutes, or until the vegetables are tender.
  6. Stir in the chopped cilantro and season with salt and pepper to taste.
  7. Serve the lemongrass coconut soup hot, garnished with extra cilantro and a wedge of lime.
